Directions
Preheat the oven to 400 degrees Fahrenheit. Place one pie crust in the bottom of a pie dish. In a large bowl, combine the sliced apples, sugar, brown sugar, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla extract. Toss until the apples are evenly coated. Spoon the filling into the crust and dot the top with the butter. Cover with the second pie crust, trim and crimp the edges, and cut several vents in the top. Brush the crust with the beaten egg. Bake for 20 minutes, then reduce the oven temperature to 375 degrees Fahrenheit and bake for 35 to 40 more minutes until the crust is golden and the filling is bubbling. Cool for at least 2 hours before slicing.
